Today I prepared a delicious pork tongue with potatoes. Pork tongue is a real delicacy. Only when I tried it did I understand all the advantages of this wonderful product. I bought a pork tongue for the New Year, used one for aspic for the holiday, the second lay in the freezer and waited in the wings. During cooking, I first washed and cleaned the tongue, removed fat and skins. I cut it lengthwise into three plates, then cut each plate in half. This made six meat strips. I salted them, rolled them into rolls, pinned them with toothpicks and put them in a heated frying pan. I fried the rolls on both sides until golden brown. Then I fried the potatoes and onions cut into cubes until half cooked. Place the tongue rolls and potatoes in a mold, fill them with broth and place them in a preheated oven for 40 minutes at 220°. When setting the temperature, I was guided by the characteristics of my oven. The tongue was well baked, it became soft, juicy, and aromatic! And very filling! One roll with a side dish was enough for me to satisfy my hunger. When I wanted to take out the toothpicks, I was faced with the fact that they were tightly embedded in the meat. The meat itself seemed to be compressed into rolls, becoming, one might say, a monolith. The dish is wonderful, perfect for a home dinner with the family, or for a holiday table. A good alternative to boiled pork, for example. I recommend it to everyone! Thank you very much for the recipe!
