Step-by-step preparation

Wash the meat and dry it. Step back 2 cm from the edge. Make a vertical cut. Don't finish it.

Turn the knife parallel to the table and continue cutting, as if unwinding a roll.

Irochka is very beautiful and tasty... like rosemary and FRESH cranberries - this means you can put it off until summer, but for now I’ll first figure out what a “neck” is and will spend a long, long time figuring out how to cut it...
