Pork Belly with Apple Cinnamon Sauce

STEP 1

1. The most time-consuming part of cooking is making cuts in the skin. At the same time, they must be made so deep that they do not reach the meat, otherwise it will burn. We make cuts on the skin about a centimeter from each other.
STEP 2

2. Transfer the meat to a baking dish. Rub the skin generously with sea salt, add grated garlic and lemon juice on top. Then pour vegetable oil over the skin and spread it over the entire surface with your hands.
STEP 3

3. Place our brisket in the oven at convection mode at 220 C for 25-30 minutes.
STEP 4

4. 25 minutes passed, the skin began to fry intensively. And now we will change the temperature regime: we will set it for 1.5 hours at 140 C in convection mode.
STEP 5

5.In the meantime, let's prepare the sauce! We cut the apples into medium slices, peel them and remove seeds, place them in a saucepan, add water (3-4 tbsp), cover with a lid and simmer for 10-15 minutes. The apples should be soft (apples are ready when they start to stick to the bottom).
STEP 6

6. Now we have the final stage of cooking the meat. Now we will put it back on 220C for 15 minutes to give the crust its final completion.
STEP 7

7. The apples are ready. Add 1 teaspoon of cinnamon to them. In the meantime, our meat can be taken out of the oven!
