Delicious juicy cutlets of Ukrainian cuisine will delight everyone at home! As a person born and living in Ukraine, I am close to the national cuisine, including Poltava, famous for its borscht, steamed dumplings, and, of course, dumplings. I visit the Poltava region several times a year and I can say that I have never eaten such delicious lard anywhere, because the technology of burning the skin with straw is already being forgotten, but there they do just that. But the meat sold on the market is mostly pork, but lard is added to these Poltava beef cutlets to make them more tender and juicy

Step-by-step preparation
Cooking time: 50 mins

Preparing the ingredients

We clean the beef from the films and cut it into pieces
STEP 3
Pass the beef through a meat grinder twice and add chopped lard
STEP 4
Add water, crushed garlic, salt, ground pepper and mix.
STEP 5
Making cutlets from minced meat
STEP 6
Bread the cutlets in breadcrumbs
STEP 7
Let's fry. During the frying process, lard releases additional fat, so you don’t need a lot of fat in the frying pan.
STEP 8
Poltava cutlets are served, topped with melted butter.

I looked and looked at these Poltava cutlets, but I still didn’t understand how they differed from ordinary ones. Everyone wanted to understand what the highlight was. I thought I should put oil in the middle, but no. So it remains a mystery to me why they are from Poltava.

The whole secret is in the pieces of bacon - this is their national dish, like our Pozharsky cutlets))) The cutlets from it turn out juicy and appetizing, well, very juicy)))

Alisa-108, the highlight is undoubtedly that, as Shura noted, lard is added and they become very juicy, and there is no bread or eggs in the minced meat, only pure meat with garlic.

Thank you girls, you opened my eyes. Honestly, I’m from Ukraine, we’ve been preparing cutlets this way all my life, I had no idea that they were from Poltava. I scoured the internet, I wanted to understand what was going on. Although, I don’t argue, some people add bread to their cutlets, some add potatoes, I even know zucchini, so Poltava means Poltava.
