STEP 1
How to make a pine nut tincture with vodka? Prepare the necessary products. Use only good quality vodka for homemade infusions. Choose your nut carefully; if you get even a little rotten one, the musty smell will spoil the entire drink and will not go away.
STEP 2
Nuts require pre-processing, without which they simply cannot be used. There is a lot of resin on the surface of the nuts. Once in the stomach, the resin is harmful to health, since it is not excreted from the body. The pancreas is the first to suffer. Therefore, proper preparation of the nut should not be neglected. First, soak the nuts in cool water, remove everything that floats to the surface, as these are empty nuts and rubbish. Then rinse the nuts well.
STEP 3
Place the washed nuts in a saucepan or saucepan and pour boiling water over them until they are completely covered with water. Place the saucepan on the fire, bring the contents to a boil and simmer for 2 - 3 minutes. Since the nut is small, it does not take much time.
STEP 4
Drain the water and rinse the nuts with cold water. Repeat the boiling and rinsing process 3 times. By washing the nuts in boiling water, you wash off the resin, simultaneously ridding the future cedar tincture of the pungent odor and bitterness, since the shell contains a lot of tannins.
STEP 5
This is the water after each drain, accordingly, it is the darkest on the left, then it becomes lighter. If the nuts are not properly treated with boiling water, the tincture will turn out dark and cloudy.
STEP 6
Place the processed nuts into a glass container. Add sugar and blackcurrant leaves, preferably fresh. Add vanillin just a little bit, on the tip of a knife, a slice of dried orange zest, or fresh. Pour vodka over everything and mix thoroughly. To prevent the alcohol from evaporating, cover the jar with a plastic bag and close the lid very tightly. Place in a dark place at room temperature for 10 days. Shake once every 2-3 days.
STEP 7
After the nutcracker has infused, it must be filtered. I have a funnel with a very fine sieve, if you don’t have one, use gauze or cotton wool. Pour the filtered tincture into a bottle and put it in the refrigerator for 3-4 days, its taste will improve.
STEP 8
The finished cedar vodka tincture made from well-washed nuts should be transparent and have a cognac color (but not too dark), approximately like in the photo. It’s okay if you make it lighter, the smell and taste will be the same. Due to inexperience, many people add more nuts; this will give a dark color and a tart taste. The drink will be viscous and unsuitable for drinking. You can fix it by diluting it with vodka 1:1. Enjoy your tasting!
