You immediately need to decide on the filling. Depending on whether the filling is sweet or not, you should increase or decrease the amount of sugar. I used applesauce as the filling, so the amount of sugar in the dough is indicated for sweet baked goods.

    Heat the kefir. The percentage of fat content of kefir does not play a special role; I used 2.5%. If it is not very fresh, there is nothing wrong with that; on the contrary, with sour kefir the dough will turn out more fluffy and airy. Pour dry yeast, sugar, and salt into a deep bowl.     Pour the dry ingredients with warm kefir (no higher than 40 degrees) and immediately pour in the vegetable oil. Stir the mixture and leave it on the table. Sift the wheat flour through a sieve. This step is important; it is advisable to sift the flour twice in order to better saturate it with oxygen, this will help the dough rise better.

    Pour wheat flour into a bowl with liquid. This should be done in parts, adding flour as needed after each kneading with a spoon, so as not to clog the dough, since you may need less or more flour. When it becomes difficult to use a spoon, turn the dough out onto a floured work surface and continue kneading until the dough no longer sticks to your hands.

    Roll the dough into a ball and place back in the bowl. Cover the bowl with the dough with cling film. Leave for about 30-40 minutes in a warm place.

    Roll each piece into a small flat cake and place a little filling in the center. I have already prepared the filling in advance. You can quickly make apple filling from peeled and finely chopped fresh apples poached with sugar. Or use another filling at your discretion.

    Place the pies on a greased baking sheet and let them stand in a warm place for about 15 minutes. Brush the pies with beaten egg and place in an oven preheated to 180 degrees, bake for about 30 minutes. Times are approximate and will depend on your oven operation.
