    During this time, the yeast forms a thick foamy cap on the surface of the milk. If the foam does not form, then the yeast has died and the dough will not rise with it. In this case, you will have to prepare the dough again, perhaps even with yeast from a different batch.

    Pour the suitable dough into a larger bowl. Add salt there and transfer soft butter at room temperature.

    Sift more than half the volume of flour into a bowl and mix the dough.

    If the dough is too runny and sticks too much to your hands, gradually sift in more flour, achieving a smooth, homogeneous consistency, while kneading the dough thoroughly. In general, knead the dough with your hands for at least 15 minutes until the flour releases all the gluten. Electric kitchen assistants will handle the task of kneading dough much faster.

As soon as the dough stops sticking too much to your hands, stop adding flour, because it is precisely because of the large amount of flour that baked goods end up being tough. Then gather the dough into a ball, cover the bowl with a towel or cling film and leave it in a warm place for about 1-1.5 hours to rise.

    Then grease your hand with a drop of sunflower oil and knead the dough directly in the bowl. Thanks to the oil, the dough will not stick to your hand. For the mushroom pie, I found a recipe for pie dough without eggs on the website. Instead of milk, I took two tablespoons of dry cream substitute and water, the rest of the ingredients were according to the recipe. The dough rose well, it turned out soft and very manageable, you didn’t even have to roll it out with a rolling pin. After placing the dough on the table, I pressed it with my palms, then easily formed a rectangle. It took a little more than half of the dough to make the pie; my baking sheet was small and this amount was quite enough. I made several buns from the remaining dough. The filling for the pie was prepared from wild mushrooms - I cut them and fried them with onions in vegetable oil. Added some grated cheese on top. The pie turned out delicious! Ruddy, with a crispy edge, thin crumb and juicy filling. Thanks a lot!
