Peasant soup with tomatoes, cabbage, potatoes

STEP 1

How to cook peasant soup? First, prepare your ingredients. Wash the vegetables thoroughly and dry. Root vegetables can be washed with a brush. Remove the skins from the tomatoes by pouring boiling water over them. Then cut into desired size pieces.
STEP 2

Peel the onions, cut into cubes and fry in a frying pan with vegetable oil until the color changes slightly.
STEP 3

Cut the peeled carrots into semicircles and add them to the onions. You can grate it on a coarse grater instead of slicing it. Stir and fry for about 2-3 minutes, stirring.
STEP 4

Crush the garlic cloves flat with the blade of a knife. Add to the vegetables and after 3-5 minutes turn off the heat. Look at the readiness of your frying - it depends on the cutting and hardness of the carrots.
STEP 5

The carrots should not even be fried, but lightly stewed, but this is a matter of taste. You can also fry it.
STEP 6

Cut the peeled white cabbage in the way that is most convenient for you: into cubes, strips or something else. I just cut it into squares.
STEP 7

Place a pot of broth on the stove and bring it to a boil. Add chopped cabbage to the broth.
STEP 8

Cut the peeled potatoes into cubes.
STEP 9

When the cabbage broth comes to a boil, add potatoes and fried vegetables to the soup. Continue cooking for another 25-30 minutes or until the potatoes are cooked through.
STEP 10

10 minutes before readiness, add tomatoes to the soup and add salt to taste.
STEP 11

Chop finely chopped greens into the prepared soup. You can do this just before serving.
