There is no need to beat for a long time. It is enough for the white and yolk to combine with water, and for the salt to dissolve.

    Heat vegetable oil in a frying pan over medium heat. Pour the egg mixture into the pan. Reduce heat to minimum. Next, fry the omelette under the lid until cooked, or you can carefully turn the omelette over to the other side. To do this, transfer it to a flat plate, and then turn it from the plate into the frying pan. Fry the omelette for about 1 more minute and turn off the heat.

I made an omelette in water in a frying pan using this recipe. I always cook omelettes with milk, but now I’m out of it. I found on my favorite website a version of the same omelet, but only with water. I decided to try it. I used homemade eggs and fine salt. Melted butter in a frying pan instead of lean butter. I scrambled the eggs and salt with a fork. Added clean water and stirred. Pour the egg mixture onto the heated frying pan. Cooked over low heat, covered, as described in the recipe. I transferred the finished omelette to a plate; it was slightly deformed, but this did not affect the taste at all. I sprinkled the omelette on the water with freshly ground black pepper and dill. It turned out tasty and aromatic. The omelette is very tender, light and airy. Served for breakfast with cucumber and chicken sausage. The omelet with water turned out no worse than with milk.
