It is better to use glass containers for ripening flakes. Stainless steel is also suitable, but you should avoid aluminum - it reacts with acid. I took a glass jar. Place a piece of bread on top of the cereal. Cover the jar with a napkin and place in a warm place.

    The next day it will be clear that the fermentation process has begun - bubbles will appear on the surface and the mixture will acquire the smell characteristic of fermentation. Stir the mixture with a spoon. And leave it to ferment for another day.

I decided to make oatmeal jelly from rolled oats flakes in water. I poured the cereal into a glass jar, put the crust of a black loaf, poured warm water and covered it with a napkin. After some time, I added about 150 ml of warm water, since all the water was absorbed and the mass seemed too thick to me. After the specified time had passed, I strained the flakes through a sieve, added a little salt and set the resulting oat milk to cook over low heat with constant stirring until it reached the consistency I needed. As the jelly cools, it becomes thicker (next time I’ll take this into account). I tried this jelly for the first time, I can’t say that it’s in the “mind-blowing” category (as they often say on the Internet), but there’s no doubt that it’s a very healthy diet drink!
