STEP 1
How to make a no-bake cake with gelatin and fruit? Prepare all the necessary ingredients. Sour cream is suitable for any fat content. It’s better to take 5-9% cottage cheese. You can use any fruit with soft pulp.
STEP 2
If your cottage cheese is grainy, you need to pass it through a blender or rub it through a sieve to make the dessert more tender. I chose the first option, combining cottage cheese, sour cream and sugar in a blender bowl.
STEP 3
Bring everything to a homogeneous, creamy mass.
STEP 4
Pour cold boiled water over the gelatin and leave for 15 minutes to swell. You can read about how to choose gelatin and its features in the article on gelatin. There is a link to it at the end of the recipe.
STEP 5
Place the milk mass in a suitable container, add vanilla sugar, stir (you can do this in step No. 2). How to properly replace vanilla sugar with vanillin, so as not to spoil the taste of the dish, can be found in the article, the link to which is at the end of the recipe.
STEP 6
To prepare the cake, I took a round bowl with high sides. You can use a container of any shape. Cover it with cling film so that after cooling the dessert can be easily separated from the walls. Wash the fruits and dry them. Choose the shape of fruit cutting as desired, keeping in mind that they will also be a decoration for the dessert. Place fruit slices on the bottom of the pan and around the edges.
STEP 7
Heat the gelatin in a water bath until it is completely dissolved. Or this can be done on the stove over low heat with constant stirring, not allowing the gelatin to boil. Pour the gelatin solution into the milk mass and mix well.
STEP 8
Carefully pour the mixture into the fruit bowl. Cover the container with cling film and refrigerate for 2-3 hours to allow the cake to set.
STEP 9
Cover the container with the cooled cake with a plate and turn it over. Remove the cling film.
STEP 10
Cut the no-bake cake with fruit, cottage cheese, gelatin and sour cream into portions and serve it with hot aromatic tea, coffee or cocoa. Bon appetit!
