Meringue roll with curd cheese and cream

Step-by-step preparation
STEP 1
How to make meringue roll? Prepare everything you need for this. Separate the egg whites from the yolks. For this you will need approximately 6 eggs. You can use any thick confiture or fresh berries to fill the roll with berries. I take blackcurrant confiture. I like it because it gives sourness to the sweet filling.
STEP 2
Beat the egg whites for a minute until light foam forms. Then, without stopping whipping, gradually add powdered sugar.
STEP 3
Continue beating the whites at maximum speed for another 4-5 minutes until they are so thick that they hold their shape well on the whisk.
STEP 4
Add lemon juice and starch to the bowl of whipped egg whites. Beat everything again, but a little - 10-15 seconds. The meringue will remain just as fluffy, but starch and lemon juice will mix well into it.
STEP 5
Line a baking tray (40*40 cm) with baking paper and place all the whipped meringue.
STEP 6
Smooth over the entire surface. This will be the top of our roll. Place the baking sheet in the oven, preheated to 180 degrees for 20-25 minutes. Be guided by your oven.
STEP 7
The meringue should be slightly golden in color. Remove the pan from the oven. Cover the meringue with another sheet.
STEP 8
Turn everything over together. Then remove the sheet on which the meringue was baked.
STEP 9
While the meringue is cooling, prepare the cream. To do this, combine cream, 33% fat, cottage cheese and powdered sugar. You only need a little powder, since the meringue itself is very sweet. Beat all ingredients well until you obtain a thick, stable cream.
STEP 10
Set aside a couple of tablespoons of cream for decoration. Spread the rest of the cream evenly over the entire surface of the inverted meringue. Apply berry filling.
STEP 11
Helping with the sheet on which the meringue lies, roll everything into a roll.
STEP 12
Decorate the top of the roll with the adjusted cream.
STEP 13
The top of the roll can be decorated with any berries or fruits. Place the finished roll in the refrigerator so that the cream hardens a little.
STEP 14
Meringue roll is ready for tea! Enjoy your meal!
