    How to marinate squid at home? First, prepare the marinade. Use extra virgin olive oil.

    Peel the garlic and chop finely. If desired, you can pass the garlic through a press.

    Cut the chili pepper into rings. If you want to reduce the heat of the pepper, remove the seeds. You can also replace the red chilies with green ones.

    Remove the zest from the lemon. I immediately grate the zest from a whole, thoroughly washed and dried lemon on a fine grater - it’s more convenient and faster. Then cut the lemon in half and squeeze the juice out of each half.

    Finely chop the parsley. If you like a spicier taste, replace the parsley with cilantro or use two types of greens at once.

    In a bowl, combine garlic, parsley, chili pepper, lemon juice and zest. Add sweet chili sauce and olive oil. Mix everything thoroughly. If you don’t have sweet chili sauce, you can either add nothing at all or add tomato ketchup. The marinade is ready.

    Now start preparing the squid. I used unpeeled frozen squid, but it is most convenient to work with already prepared squid. They are sold frozen in the form of tubes for stuffing. The total weight of defrosted squid should be 500 g, so take it with a reserve. You will learn how to properly defrost frozen squid from the article; the link to it is at the end of this recipe.

    If you have unprocessed squid, clean them of skin and entrails, and remove the chitinous plate. Separate the tail fins from the squid's body. Cut the squid carcasses into rings. Cut the tail fins into strips.

    Heat vegetable oil in a frying pan. Place the squid and fry, stirring, over medium heat for no longer than 2-3 minutes. Do not fry longer!!! Otherwise, the squid will become tough as rubber.     Place the squid in a bowl, pour in the marinade and stir.

    Cover the bowl of squid with cling film and refrigerate for at least 1 hour, preferably overnight, so that they have time to marinate well.

I wanted to try marinated squid. I love squid in any form, but I haven’t tried it in this form yet. I had frozen, unpeeled carcasses, so I didn’t cut them into rings. Boil for a minute in salted boiling water, cool and peel. Cut it into half rings. For the marinade, I first chopped aromatic parsley and sprinkled it with salt so that the juice appeared. Added extra virgin olive oil, lemon juice and red pepper on the tip of a knife. I passed the garlic through a press to get more spicy juice. I left the squid at room temperature for a couple of hours, because my olive oil hardens in the refrigerator. I really liked this snack! Usually squids are added to delicate, neutral salads. And here they are so hot and spicy! This is an interesting and tasty snack! Thanks for the recipe!
