Latkes
Traditional crispy Jewish potato pancakes. Tasty.
One of the traditional dishes for the holiday of Hanukkah is latkes - (aka potato pancakes, aka levivot).
The basis of latkes is potatoes. The ideal latkes are thin (less than half a centimeter thick), with beautiful, delicate crispy edges - for this, the potatoes are grated on a very coarse grater.
Experienced chefs consider the main difference between hash browns and latkes to be that latkes involve thoroughly squeezing the grated potatoes to avoid excess moisture. In addition, latkes are prepared only with olive oil.
