Govurma is a traditional Caucasian food, which is prepared among different nations from different types of meat. In Armenia, govurma is called kavurma and it is prepared from beef fried in its own juice. Initially, kavurma was prepared for the purpose of long-term storage. The fried meat along with the fat was poured into clay pots and tightly closed. Solidified fat, which has an incredibly refined taste, was an excellent natural preservative and made it possible to store meat in this form not only in summer, but also in winter. As in Azerbaijani cuisine, Armenian kavurma is used both as an independent snack and as part of various dishes.
