How to freeze fresh cucumbers

STEP 1

How to freeze fresh cucumbers for the winter? Prepare fresh, firm, pickling-type cucumbers (prickly). You can, of course, use smooth-fruited ones, but what's the point?! After all, they are now available almost all year round. Rinse the cucumbers thoroughly under running water to remove any remaining soil. Let the water drain, otherwise it will create additional frost in the package when frozen.
STEP 2

Cut the ends off both sides of the cucumbers.
STEP 3

Chop the cucumbers as desired. You can even grate them on a coarse grater. The shape of the cut will depend on what kind of dishes you plan to add such cucumbers to. I chose small sized straws to use in salads.
STEP 4

I will freeze the cucumbers in special tight vacuum seal bags. But any thick, freezer-safe bag, or zip-lock bag, or even a plastic container will do. But, in any case, I recommend freezing small portions, about one dish. This will make it easier and faster to defrost the cucumbers.
STEP 5

Pack the cucumbers using a vacuum sealer or other method of your choice. Set the vacuum sealer to low pressure to avoid crushing the delicate cucumbers.
STEP 6

Label each bag with the date it was frozen. This will allow you to control the freshness of the products. Place the packages in a freezer with a temperature of -18 degrees or lower. There the preparations can be stored all winter.
