STEP 1

How to make a horseradish appetizer from tomatoes and horseradish with garlic? Prepare the ingredients according to the list. For such preparation, it is not only acceptable, but even desirable to use overripe, soft tomatoes. They are juicier, sweeter, and that’s what this snack needs. Wash the tomatoes; if they have rough, thick skin, remove it. Read how to do this correctly at the end of the recipe. Cut out the place where the stalk is attached, and cut the pulp into several parts.
STEP 2

Wash the horseradish roots, peel them with a vegetable peeler or knife and cut into several pieces. After cleaning, the roots need to be rinsed again to make sure that no dirt gets into the jar with the preparation. Since the appetizer will be prepared without cooking, everything must be sterile at this stage. We divide the garlic into cloves, peel them from the films and wash them with running water, let the water drain.
STEP 3

If you don’t have a meat grinder, then horseradish and garlic can be grated on a fine grater, but since these plants are very vigorous, you should arm yourself with rubber goggles and some kind of goggles or mask to protect your eyes and nose from the fumes released from horseradish when grinding it.
STEP 4

Grind the tomatoes using a blender or food processor, or grind together with garlic and horseradish in a meat grinder. Those who like spicy snacks can add a piece of hot pepper.
STEP 5

The most difficult work is done, the vegetables are chopped. Add salt, sugar and mix thoroughly.
STEP 6

Wash the jars with soda solution and sterilize them in a way convenient for you. I always make this in the oven. Other sterilization methods are described in the article below the steps. Wash the lids with soda and boil.
STEP 7

Place the workpiece in sterile jars and immediately close the lids. Store the snack in a cool place. There is no need to be afraid that without additional sterilization and vinegar in the composition it will deteriorate. Horseradish itself is a good natural preservative; it will not allow the product to sour. Bon appetit!
