STEP 1
How to fry sausage in a frying pan? First, let's prepare all the necessary ingredients for preparing homemade sausage, which we will later cook in a frying pan. Wash the meat and lard in cold water and dry. We will process the intestines according to the instructions. Some need to be soaked for several hours, some, like mine, just need to be thoroughly rinsed in warm water, inside and out.

Cut the pork and lard into pieces.
STEP 3
Let's pass the meat in a meat grinder with a large grid.
STEP 4
Let's change the grate of the meat grinder to a grate with a fine cross-section and let the lard pass through. Add it to the minced meat.
STEP 5
Mix the minced meat and lard thoroughly.
STEP 6
Peel and chop the garlic, add the garlic to the minced meat. Add salt, ground black pepper and cornstarch there. Mix thoroughly.
STEP 7
Pour ice water into the minced meat and quickly mix until smooth.
STEP 8
Now we will make our sausages. To do this, we tie one end to the prepared intestine and fill it tightly with our minced meat. I use a meat grinder with a special attachment for this. But you can use other devices that you have. After filling, tie the second end.
STEP 9
Fill all the prepared intestines and place them in a bowl. Place in the refrigerator for 12 hours to shrink. Then we look through the sausages and if we see voids, we pierce them with a needle to remove air.
STEP 10
In order to fry the sausage without the casing bursting. She needs to be prepared. To do this, we pour water into a saucepan, add salt and bring to a boil. Reduce to a minimum and lower our sausage. Boil it for 5-7 minutes.
STEP 11
Remove the sausage from the pan and wipe off excess liquid with a paper towel. Pour oil into a frying pan, heat it and add the sausage.
STEP 12
Fry our sausage over low heat for 20-30 minutes until fully cooked. You can check readiness by piercing the sausages with a toothpick; clear juice should flow out. If the meat juice is cloudy, then we continue frying.
STEP 13
Remove the sausage from the heat and serve immediately. They can be served with any side dish or just with greens. Yes, you can serve it on a plate, but it tastes better, in my opinion, when it is served directly in the pan in which it was fried.
