STEP 1

How to make homemade quesadia with minced chicken? First, prepare the necessary ingredients for the dough. The butter should be cold, so remove it from the refrigerator immediately before cooking. Sift the flour into a deep bowl and mix it with salt and baking powder.
STEP 2

Pour in a spoonful of vegetable oil and add the diced butter. Gently grind everything into crumbs with your hands.
STEP 3

Pour in hot water at a temperature of approximately 50-60 degrees. Start kneading the dough in a bowl with a spoon, and then transfer it to a floured table and knead it with your hands until it reaches the desired state: the dough should come off your hands well and turn out elastic and soft. If necessary, add a little more flour. Form the dough into a ball, wrap it in a bag and let it rest for 20 minutes.
STEP 4

Divide the dough into 4 parts: we will have 4 cakes. Roll each part thinly into a circle. If you get uneven edges, you can put a plate on top of the cake and trim them off. A neat round cake comes out.
STEP 5

Fry the tortillas in a dry frying pan over medium heat until brown spots appear - about 30-40 seconds on each side. It doesn't take much longer to prevent them from drying out. The finished tortillas can be immediately folded in half and placed in a bag to keep them soft.
STEP 6

Prepare all the necessary ingredients for the filling. It can be done while the dough is resting, so we will save time on cooking. Grate the cheese on a coarse grater. Wash the pepper, remove the stalk with seeds, and cut the pulp into strips.
STEP 7

Chop the peeled white onion, wash the green onion and also finely chop.
STEP 8

Pour some vegetable oil into the frying pan. When it is hot enough, add the onions, peppers and minced meat. Add salt and spices to taste. Stir and fry over high heat until the minced chicken is cooked - minced chicken cooks quickly, about 10 minutes. Add tomato paste and green onions, stir and turn off the heat after 1 minute. The filling is ready.
STEP 9

Take one tortilla at a time and place cheese on one half as the first layer, minced meat and pepper as the second, and cheese again as the third.
STEP 10

Fold the tortilla in half and fry in a dry frying pan (possibly with a textured bottom) over high heat for 2 minutes on each side. The main thing is that the cheese has time to melt. The melted cheese will glue the filling together and it will stick well in the flatbread. Divide the finished quesadies into 2 parts and serve. Bon appetit!
