  1. STEP 1

    STEP 1

How to make homemade caramel on a stick? Prepare all the necessary ingredients. How to choose the ideal cooking pot, read the article on this topic. You will find the link at the end of this recipe.

  2. STEP 2

    STEP 2

Also prepare wooden sticks on which you will place the lollipops. Wooden skewers work well for this purpose. If they are too long, cut them in half. Prepare the paper on which the caramel will dry. A Teflon mat is best. If you don’t have it, take regular parchment and grease it well with odorless vegetable oil. I also used confectionery sprinkles for decoration.

  3. STEP 3

    STEP 3

Take a saucepan with a thick bottom. Put sugar in it, pour water and lemon juice. Stir.

  4. STEP 4

    STEP 4

Place the saucepan on the fire. Stirring with a spatula, wait until the sugar is completely dissolved.

  5. STEP 5

    STEP 5

When the water boils further, you can stop stirring constantly. Continue cooking over moderate heat. Have a container of cold water ready nearby; you will need it instead of a thermometer.

  6. STEP 6

    STEP 6

Let the caramel cook for a bit; it will boil vigorously and turn slightly yellow. This will be a signal to make a test. To do this, dip a wooden stick into the boiling syrup for a second, remove it and immediately plunge it into cold water. After dipping the stick into the water, quickly swirl it in the water to cool the caramel.

  7. STEP 7

    STEP 7

Take out the stick and touch the caramel that has stuck to it. if it is soft and easy to flatten, then you need to cook it further. If the caramel becomes hard after water, then it is ready. Mine is still a little plastic in this photo. I continue to cook.

  8. STEP 8

    STEP 8

Now you can see from the color that the caramel should be ready. A test with water gave a positive result - the ball of caramel on the stick became hard almost immediately. Turn off the heat.

  9. STEP 9

    STEP 9

Using a spoon, pour the caramel into equal circles onto the mat or paper. Be careful the caramel is hot and can easily get burned!

  10. STEP 10

    STEP 10

Insert the sticks, pressing them lightly into the caramel.

  11. STEP 11

    STEP 11

    Top with decorations if desired.

  12. STEP 12

    STEP 12

So make caramel sticks at home using sugar from all the syrup. Wait until they cool completely and only then remove them from the paper. Enjoy your meal!

I saw the recipe and remembered that I also once made lollipops like this, only in silicone molds. And then I added citric acid instead of juice. This time I prepared everything according to this recipe. I also checked the readiness of the caramel by dipping a stick in cold water. The syrup is prepared very quickly, and the finished sweets harden even faster. I added a drop of red dye to the syrup. Not very useful, but the color became bright. I poured the syrup with a teaspoon onto the parchment. The lollipops turned out delicious, just like in childhood, when we heated sugar in a spoon on gas)) I forgot to wait for the bubbles to subside, so the caramel turned out to have holes inside. My daughter liked it)

It turned out incredibly delicious! No wonder I was tempted by this recipe and immediately prepared it. I cooked until the mass turned brown and didn’t even check for a drop of cold water - and that’s how it all turned out. It is unlikely that I will buy candy now - I will only prepare them myself according to this recipe. Thank you very much for the recipe! Attached is a photo report -->>

Making caramels using this recipe is a pleasure! My 8-year-old son really enjoyed participating in the cooking process and gobbled up the candy in a flash (for the test, we prepared half of what was specified)! It was very tasty and interesting! Ekaterina, thank you very much for the recipe!!!
