If you are sure of the body of water in which you caught the fish, you can immediately cook from it, but if you don’t know where the fish was caught, it is better to freeze it, then defrost it and start cooking. The freezing process will kill all harmful bacteria and microorganisms.

    If you have frozen fish, you need to defrost it properly to preserve the maximum amount of benefits. To do this, immediately after freezing, place the fish in the refrigerator for 8 hours and only then completely defrost at room temperature. Wash the fish well in running water and be sure to dry it. Cut into small pieces - literally 1 bite.

    Place the chopped fish pieces in a bowl and pour in the vinegar and stir. It should be vinegar 6-9%, not vinegar essence. If you have essence, to obtain the required vinegar, dilute it by taking 7 tablespoons of water for 1 spoon of vinegar essence. Place the fish in the refrigerator for 30 minutes.

    Peel the onion and cut into small cubes. You can peel the onion much easier if you first soak it in cool water for 20 minutes.

    Wash the carrots with a brush under running water, peel and cut into cubes. You can also grate it using a Korean carrot grater - it will even be more authentic.

    Place chopped onions and carrots on the fish.

    Salt and add coriander. You can add both coriander seeds and ground coriander, depending on your taste preferences. Mix everything well. The classic recipe no longer calls for adding any spices or seasonings, except regular hot ground pepper - you can add a pinch of it. But, if you wish, you can experiment and add your favorite spices to the heh with onions and carrots.

    Heat vegetable oil in a frying pan. I recommend using odorless vegetable oils, preferably refined types of oils. Bring the oil to a boil.

We love Heh from any fish. My mother also always prepared it according to this recipe. The most successful snack is made from pike perch. I froze the fillet a little, this helps remove the skin better. I cut the fillet into thin slices, the onion into half rings, and simply grated the carrots on a coarse grater. I had my own fresh coriander) The boiling oil cooked the carrots and it gave a little orange color to all the ingredients) I left it to brew overnight in the refrigerator. An excellent snack was ready for the morning, the taste was amazing, sour and spicy! This is a very successful recipe for pike perch heh, thank you!

To be honest, probably due to my lack of education, I see this name “heh” for the first time. I had to consult a dictionary. It turns out that this is a salad made from raw or frozen fish, and as it turns out, it is prepared not only from hake, but also from other types of fish, including sea and freshwater, predators and peaceful, red, etc. I have not tried this salad and I haven’t cooked it, but I think it should be delicious.
