STEP 1
How to make heh from pike perch in Korean at home? Prepare all the necessary products. We will not heat-treat the fish; it will be practically raw, so the freshest fish is needed. If you are sure of the body of water in which you caught the fish, you can immediately cook from it, but if you don’t know where the fish was caught, it is better to freeze it, then defrost it and start cooking. The freezing process will kill all harmful bacteria and microorganisms.
STEP 2
If you have frozen fish, you need to defrost it properly to preserve the maximum amount of benefits. To do this, immediately after freezing, place the fish in the refrigerator for 8 hours and only then completely defrost at room temperature. Wash the fish well in running water and be sure to dry it. Cut into small pieces - literally 1 bite.
STEP 3
Place the chopped fish pieces in a bowl and pour in the vinegar and stir. It should be vinegar 6-9%, not vinegar essence. If you have essence, to obtain the required vinegar, dilute it by taking 7 tablespoons of water for 1 spoon of vinegar essence. Place the fish in the refrigerator for 30 minutes.
STEP 4
Peel the onion and cut into small cubes. You can peel the onion much easier if you first soak it in cool water for 20 minutes.
STEP 5
Wash the carrots with a brush under running water, peel and cut into cubes. You can also grate it using a Korean carrot grater - it will even be more authentic.
STEP 6
Place chopped onions and carrots on the fish.
STEP 7
Salt and add coriander. You can add both coriander seeds and ground coriander, depending on your taste preferences. Mix everything well. The classic recipe no longer calls for adding any spices or seasonings, except regular hot ground pepper - you can add a pinch of it. But, if you wish, you can experiment and add your favorite spices to the heh with onions and carrots.
STEP 8
Heat vegetable oil in a frying pan. I recommend using odorless vegetable oils, preferably refined types of oils. Bring the oil to a boil.
STEP 9
Pour boiling oil over the fish and stir again.
STEP 10
The best version of pike perch heh with vinegar is ready. Serve it immediately to the table. It is recommended to store this dish for no more than 2 days in the refrigerator, and even better, make enough to eat at one time. Bon appetit!
