Gurian cabbage with beets

Very unusual taste! Reminds me of my childhood in some way! Another original recipe for preparing vegetables for the winter is Gurian cabbage. The recipe for preparing Gurian cabbage came to us from Georgian cuisine.

    STEP 2

We wash the cabbage, remove the top damaged and dirty leaves, cut out the stalks, and cut into large pieces.

  3. STEP 3

    STEP 3

We clean the beets and also cut them into large pieces.

  4. STEP 4

Peel the garlic. You can cut each clove into two parts (if the cloves are large, you can cut them into several large parts).

  5. STEP 5

    STEP 5

Place cabbage and beets in layers in a prepared container, alternating them with each other: several pieces of beets, garlic, pieces of cabbage, etc. We fill our containers tightly to the top. The top layer should be beets.

Prepare the marinade from vegetable oil, vinegar, salt and sugar. You can also add ground red pepper, and if you don’t have it, then pieces of capsicum. Having brought the mixture to a boil, pour it into our containers with cabbage to completely cover the vegetables.

After a couple of days, move the containers to the refrigerator. And after another day, you can eat the appetizer. You can also close the prepared Gurian cabbage in jars.

In winter, we often use sauerkraut or pickled cabbage, we especially love it in combination with beets. We really liked Gurian-style cabbage with beets for the winter! I marinated it in a five-liter bucket. I used the quantity of cabbage by eye to see how much would fit in the container. I cut the beets into large cubes. I took more garlic so that there was a noticeable bite and an appetizing aroma. In addition, I decided to add carrots, which I cut into slices on the bias. I decided to reduce the amount of sugar to half a glass, although I love sweet cabbage, it was too much for me. In total, the vegetables were pickled for three days, after which we tried the appetizer. It turned out tasty, crispy, a little spicy, quite sweet, the apple cider vinegar tastes good. All these flavors harmonize perfectly and together create a delicious and aromatic bouquet.
