If you take poultry, it must be young (less than a year), otherwise it will not be suitable for roasting.

    If the chicken is frozen, defrost the chicken in advance. Remove the packaging and place it in a container on the bottom shelf of the refrigerator the day before cooking. To marinate, take a bowl or pan that will accommodate it freely. The material from which it is made must not oxidize. Enameled, plastic, ceramic and glassware are suitable. Rinse the chicken under running water, remove the entrails and feathers, if any.

    Peel the garlic. Wash it, dry it and chop it in a garlic press or, like me, grate it on a fine grater.

    Wipe the carcass with a paper towel so that no moisture remains and it marinates better. Thoroughly rub the chicken inside and out with salt, garlic and spice mixture. Cover the dish in which the chicken will be marinated with cling film, a lid or a towel. Leave at room temperature for 15-20 minutes. The longer the chicken marinates, the tastier and juicier it will be. I often leave it overnight.

    Turn on the oven to preheat to 180 degrees on top-bottom mode. If there are a lot of large pieces of spices on top of the chicken, you can remove them to prevent them from burning. Tie the legs of the chicken together with a thread, and tie the wings so that they fit snugly to the carcass. Having moved with my boyfriend to a new rented apartment, I immediately began exploring the kitchen. The guy immediately asked if I could cook grilled chicken, because he loves it very much, and before that he only ate store-bought ones. And I decided to try it! I did everything according to the recipe, used a variety of spices, in large quantities, and added chopped garlic to the marinade. The chicken was marinated for a day in a bag. Next came the most difficult part - attaching the chicken to the spit. I asked my beloved to do this, well, it’s not a woman’s job to put a chicken on a spit, and besides, you need a lot of physical strength. By the way, he dealt with it quite quickly and our chicken went into the oven. Our bird took 2 hours to prepare, after which time we received an incredibly tasty crust and meat that fell off the bones on its own. The chicken was eaten with vegetable salad, pita bread and sauce. The guy said that he had never eaten anything tastier, and that it couldn’t be compared with grilled chicken from stalls and cookeries. I cooked chicken breast in this marinade and baked it in a slow cooker for 30 minutes. MIRACLE !!! My son swallowed it after training and didn’t even have time to take a photo. I found it by smell.
