STEP 1

How to make grilled chicken in the oven? Prepare the necessary ingredients. It is very important to choose the right chicken. She should weigh no more than 1.5 kg. It is advisable to buy chilled, since it is difficult to judge the freshness and quality of meat from a frozen carcass. The chicken should be light pink in color with a neutral odor. If you take poultry, it must be young (less than a year), otherwise it will not be suitable for roasting.
STEP 2

If the chicken is frozen, defrost the chicken in advance. Remove the packaging and place it in a container on the bottom shelf of the refrigerator the day before cooking. To marinate, take a bowl or pan that will accommodate it freely. The material from which it is made must not oxidize. Enameled, plastic, ceramic and glassware are suitable. Rinse the chicken under running water, remove the entrails and feathers, if any.
STEP 3

Peel the garlic. Wash it, dry it and chop it in a garlic press or, like me, grate it on a fine grater.
STEP 4

Wipe the carcass with a paper towel so that no moisture remains and it marinates better. Thoroughly rub the chicken inside and out with salt, garlic and spice mixture. Cover the dish in which the chicken will be marinated with cling film, a lid or a towel. Leave at room temperature for 15-20 minutes. The longer the chicken marinates, the tastier and juicier it will be. I often leave it overnight.
STEP 5

Turn on the oven to preheat to 180 degrees on top-bottom mode. If there are a lot of large pieces of spices on top of the chicken, you can remove them to prevent them from burning. Tie the legs of the chicken together with a thread, and tie the wings so that they fit snugly to the carcass. This is necessary so that during rotation the chicken stays compactly on the spit and does not cling to the walls of the oven. Especially if your chicken is larger.
STEP 6

Using a skewer, pierce the chicken along the spine. It is convenient to call your husband for help at this step (if you are a woman), since in order for the chicken to hold better and not turn, it is better to pierce part of the carcass from the inside with a skewer. My spit has metal pins to secure the chicken. They pierce the carcass from above and below, then they are fixed with bolts.
STEP 7

Turn the spit with the chicken in your hands and check that it is firmly secured and does not turn. Secure the spit in the oven and turn on the grill mode. Bake the chicken until golden brown, about 1.5-2 hours. Select the exact time and temperature according to your oven.
