Green bean lobio

STEP 1

How to make lobio from green beans? Prepare your food. You can take fresh or frozen beans; you don’t have to defrost the latter. The set of spices can be anything, for me it’s suneli hops and ground coriander.
STEP 2

Since this dish cooks quickly, prepare all the vegetables at once. If you have fresh green beans, cut them into pieces about 5cm long. Peel the onion and cut into small cubes.
STEP 3

Remove the skins from the tomatoes. To do this, make cross cuts on top of them with a sharp knife. Place the tomato in boiling water for 1-2 minutes. Take it out, put it in cold water, keep it in it for a while. The skin will easily peel off due to temperature changes.
STEP 4

Cut the peeled tomatoes into cubes.
STEP 5

Wash the bell pepper, cut out the center with the seeds, and cut the flesh into small strips. Chili pepper - thin rings. Adjust its quantity to your taste.
STEP 6

Wash the greens, dry well and finely chop. I have young cilantro, parsley and basil would also work.
STEP 7

Crush walnuts in a mortar or grind in a blender until fine crumbs.
STEP 8

Place a saucepan with water on the stove to cook the beans. At the same time, set the frying pan to heat up. Pour vegetable oil onto it. Fry it, stirring, for a few minutes until soft. Add salt to boiling water, then add beans. Cook it over low heat for 8-10 minutes.
STEP 9

Then add the tomatoes to the onion. Fry the vegetables for about 5 minutes more. Then add the chopped peppers to the pan. Fry everything together for a few more minutes. Meanwhile, the beans will be ready, place them in a sieve. Pour salt and spices into the frying pan, squeeze the garlic through a press, add herbs. Stir.
STEP 10

Add the beans to the vegetables and pour in about 100 ml of hot water. Reduce heat, cover the pan with a lid and simmer the beans for another 5 minutes. You can adjust the thickness of the lobio with the amount of water.
STEP 11

After 5 minutes, add the nuts, stir, turn off the heat. Cover the pan with a lid and leave the lobio to brew. Then serve. Can be served hot or cold.
