STEP 1

How to make glucose syrup at home? Prepare the necessary products. It is better to take filtered or melted water. Or just let it sit.
STEP 2

Pour sugar into a thick-bottomed pan. A separate article will help you with choosing a pan using the link at the end of the recipe. Heat the water and pour out 10 ml, you will need it later.
STEP 3

Pour almost hot water over the sugar and stir well until the sugar dissolves as much as possible.
STEP 4

Place the pan over low heat and stir until the sugar is completely dissolved. Bring the syrup to a boil, add citric acid and stir well until smooth.
STEP 5

Cover the pan with a lid and, without stirring, cook over low heat for 25 - 30 minutes.
STEP 6

Under the lid, the syrup will bubble gently and the color will turn light amber.
STEP 7

Add 10 ml of water that was left to the soda and stir until all the lumps are separated.
STEP 8

Pour the soda solution into the syrup. There will be a violent reaction immediately.
STEP 9

The mass will foam and increase in volume, forming many bubbles. Leave the syrup for 15 minutes on low heat, stirring occasionally.
STEP 10

Wait until the mixture calms down and the bubbles disappear.
STEP 11

Remove the pan from the stove, let the syrup cool, skim off the foam and pour into glass jars.
STEP 12

Close the jars with cooled syrup and store in the refrigerator. If necessary, you can use it immediately. From this quantity of products, about 700 ml of high-quality glucose syrup is obtained.
