    Pour almost hot water over the sugar and stir well until the sugar dissolves as much as possible.

    Place the pan over low heat and stir until the sugar is completely dissolved. Bring the syrup to a boil, add citric acid and stir well until smooth.

    Cover the pan with a lid and, without stirring, cook over low heat for 25 - 30 minutes.

    Under the lid, the syrup will bubble gently and the color will turn light amber.

    Add 10 ml of water that was left to the soda and stir until all the lumps are separated.

    Pour the soda solution into the syrup. There will be a violent reaction immediately.

    The mass will foam and increase in volume, forming many bubbles. Leave the syrup for 15 minutes on low heat, stirring occasionally.

    Remove the pan from the stove, let the syrup cool, skim off the foam and pour into glass jars.

I wanted to make candy canes. The recipe included glucose syrup among other ingredients. I had never cooked it and had no idea what it was at all. On the website, I found a recipe for glucose syrup at home and immediately started preparing it. Cooking it turned out to be not as difficult as I thought at first. And for its preparation, ingredients that are always available at home are used: sugar, water, citric acid and soda. In total, the glucose syrup is prepared in just under an hour, but active participation in the preparation takes literally ten minutes. The syrup turns out to be a very beautiful amber color. It tastes like cockerel on a stick (or cockerel on a stick tastes like glucose syrup). I ended up with about 700 ml of syrup, so now I will look for recipes in which I can use it.
