Freezing beets

Step-by-step preparation
STEP 1
To freeze, take sweet beets, preferably the same size, since we will cook them in the microwave. Wash the vegetables under running water, making sure to rub the skins with the rough side of a dish sponge. Pay special attention to the tips on both sides, as soil usually accumulates there. Don't cut off the ends yet. If you prefer to cook the beets in a saucepan, skip steps 2-4.
STEP 2
I recently discovered a new way to cook beets, after which I threw away my separate “root vegetable” saucepan. I simply place the beets in a roasting bag, tie the ends on both sides, and make a few slits through the top of the bag to allow steam to escape.
STEP 3
I put the beets in the microwave and cook them at 800 watts for 15 minutes in three batches. It is advisable to take a break of about a minute every five minutes of microwave operation. In general, everything is individual, look at the softness. If you pierce the finished beets with a knife, they should slide out freely.
STEP 4
Carefully open the bag so as not to get burned by the steam, and let the beets cool completely for about twenty minutes.
STEP 5
Use disposable gloves to avoid getting your hands dirty.
STEP 6
You can also wrap the board in a thick plastic bag, one that cannot be cut with a knife. But this is really for those who don’t like washing dishes. No, it's not laziness! This is an effective use of your time :) Peel the beets.
STEP 7
Cut the vegetables into medium cubes, slices, or whatever you like. This will depend on what dish you plan to use the beets for next. I am preparing a semi-finished product for vinaigrette.
STEP 8
It's best to freeze beets in airtight Ziploc bags or vacuum seal bags if you have a vacuum sealer. I prepared the bags for the packer. By the way, it is more profitable to buy a roll with a sleeve and make bags from it yourself.
STEP 9
Distribute the beets into the bags in a thin layer. I got one packet, just enough for one serving of vinaigrette. Vacuum seal the bags on low pressure, the high vacuum will turn the soft beet pieces into a puree. With a ziplock, just close the zipper. Place stickers with the frozen date on the bags and place them in the freezer at a temperature of -18 degrees or lower. The preparations will be stored there all winter.
