Finger-licking tomatoes without sterilization
Step-by-step preparation
STEP 1

How to make finger-licking tomatoes without sterilization for the winter? Prepare all the necessary products. Small, elongated, plum-shaped tomatoes are suitable for pickling and pickling. Choose ripe tomatoes of a uniform color without damage, preferably ground tomatoes. I got 3 cans of the product: one liter and two 0.75 liters each. For each of the three jars use 1 teaspoon of vinegar. For a 2-liter bottle - 2 spoons, for a 3-liter bottle - 3 spoons.
STEP 2

Sterilize the jars in any convenient way. My jars are small, so I pour some water into them and put them in the microwave for 5-7 minutes. Boil the lids for 5-7 minutes. STEP 3

In each jar, place half or a leaf of bay leaf and a couple of allspice peas. Of course, you can add some other herbs and spices: some people like to add clove buds, others dill umbrellas or tarragon. But the good thing about this recipe is that very tasty tomatoes are obtained with a minimum amount of spices and seasonings.
STEP 4

Wash the tomatoes well and dry. If you have tomatoes with branches, you can leave them.
STEP 5

Prick each tomato 3-4 times with a toothpick in the area of the stalk. This must be done so that the skin of the tomatoes does not burst when we pour boiling water over them.
STEP 6

Pack the tomatoes tightly into the jar. To fit more tomatoes, gently tap the jar several times on a towel folded several times on the table.
STEP 7

Boil water and pour over tomatoes.
STEP 8

Cover the jar with a lid and let stand for 7-10 minutes.
STEP 9

Then drain the water. It is convenient to do this using a special lid with holes. Add salt and sugar at the rate of 2 tablespoons of salt and sugar per 1 liter of water.
STEP 10

Place the marinade on the fire and bring to a boil.
STEP 11

While the marinade is boiling, add chopped garlic to the jar. It should be very small and create the illusion of snowflakes in the jar. I put the garlic through a press, but you can grate it or chop it with a knife.
STEP 12

There should be a lot of garlic.
STEP 13

Pour the boiling marinade over the tomatoes.
STEP 14

And pour vinegar directly into the jars. Vinegar 6-9%. If you have essence, dilute it to vinegar in a ratio of 1:10. Close the jars with screw caps or roll them up.
STEP 15

Turn the jars over and leave them until they cool completely. Sterilization is not required.
STEP 16

Such tomatoes are perfectly stored in ordinary apartment conditions without a refrigerator. Bon appetit!
