Magnago, I, too, like you, was confused by this amount of oil, but when I started preparing the salad, I realized that the eggplants let out a lot of juice and the whole mass (a mixture of eggplants and eggs) was simply evaporated first and at the same time the eggplants were almost ready, then everything was just fried a little and then stewed under the lid. The fact of the matter is that a lot of fat in this salad is not desirable, so it all turned out, the sour cream gave a little lubrication and taste, the salad did not lose its uniqueness at all, the eggplants became soft and tender, not fried, and very similar to the taste of mushrooms.
