Break one egg into a bowl and whisk with a spoon.

Soak the bun in milk.

Then dip in egg.

Place in a frying pan heated with oil and fry on both sides until golden brown.

Place on a paper towel to absorb excess oil.

Prepare poached eggs.

Fry the spinach in a frying pan in butter for a couple of minutes and place on a bun.

Top the spinach with sliced salmon and pepper.

Wonderful recipe! My spoiled student children would not refuse such a breakfast... Eggs Benedict with salmon is not like the now banal yogurt with cereal... It’s hard not to appreciate such fish with a warm poached egg! Thank you!!!
