STEP 1
How to make royal Easter from cottage cheese without baking? Prepare the necessary ingredients. Take cottage cheese with a fat content of 5% or higher. Choose sour cream with at least 10% fat content. Remove the butter from the refrigerator in advance. STEP 2
Remove any debris from the raisins and rinse in a strainer under running water. Pour hot water over the raisins.
STEP 3
The cottage cheese must be rubbed through a sieve. This will take some time, but I strongly recommend doing it this way, because then in the future Easter you won’t feel grains of cottage cheese and its texture will be velvety.
STEP 4
Add the yolks, sugar, vanilla sugar, all the sour cream to the cottage cheese and mix until smooth. You will learn how to properly replace vanilla sugar by reading the article at the end of the recipe.
STEP 5
Add softened butter and stir.

Pour the curd mixture into a ladle or small saucepan and cook over low heat, stirring constantly.
STEP 7
As soon as the first bubble from the boiling process appears, immediately remove the ladle from the heat. The mass cannot be boiled.
STEP 8
Next, you need to cool the curd mass. To do this, you can place the ladle in a bowl of ice water (and add ice cubes directly there). I placed the ladle directly on the frozen ice pack. Stir the mixture until it is cool enough and put it in the refrigerator for an hour.
STEP 9
Place the raisins in a colander and then on paper towels to absorb excess moisture.
STEP 10
I’m sharing a little trick with those who don’t have a bean bag (special form) at hand. You can use a tall glass made of thick plastic. These usually sell berries or peeled and sliced fruits. Using a utility knife (or awl), make small round holes in the bottom of the glass.
STEP 11
You will also need holes along the entire perimeter of the glass up to a mark of two centimeters from the bottom in a checkerboard pattern.

Chop the shelled walnuts with a knife. Add candied fruits, raisins and nuts to the cooled curd mixture and stir.
STEP 13
Line the improvised bean box with two layers of damp! thick gauze so that the edges hang down. Smooth out the gauze inside the glass as much as possible so that the Easter pattern is even.
STEP 14
Transfer the thickened mass into a glass. Carefully fold the edges of the gauze and leave the Easter under pressure in the refrigerator overnight. I have a heavy can as a burden. Some serum will be released overnight. She won't be needed. Before serving, carefully remove Easter from the pan and decorate to taste. I love a simple decoration made from candied fruits.
