    Carefully cut the plums into two parts and carefully remove the seeds, then you can cut the halves into 2 more parts to reduce the cooking time

    Place the chopped plums in a deep bowl, sprinkle with salt, freshly ground pepper, add a mixture of herbs and drizzle with olive oil. Mix everything well.

    Cover a baking sheet with parchment paper, place the plums in one row, cut side up, tightly to each other; they will shrink in size during drying.

    This is what plum pieces look like in the marinade. Place the baking sheet in an oven preheated to 120-130 degrees for 3 hours. The door must be slightly open to allow moisture to evaporate.

    After three hours we get dried plums. If desired, you can reduce or increase the drying time to obtain the required degree of dryness, but do not overdo it so as not to get dry skins. My plum has dried well, but has not lost its juiciness

    For long-term storage, carefully transfer the dried plums into a sterilized jar, after pouring a little oil into the bottom. We try to pack the plums more tightly.

    Sprinkle each layer of plums with herbs, pour in olive oil so that it completely covers the plums, cover with a lid and store in the refrigerator. Let it brew for several days.

I made dried plums for the first time and tried them for the first time. It worked out wonderfully. I sprinkled the plums with a mixture of Italian herbs. I had small fruits, so I kept them in the oven for two hours instead of three. I really liked the dried plums. You don't notice the salt in them, but the pepper made them piquant. Fresh fruits taste sweet and sour, but dried fruits have lost their sweetness, but retained their sourness. Pleasant sourness, don’t tear your eyes out. Thanks for the recipe! It turned out very elegant.

We should also try plums, we have a lot of them in the garden, and I tried cherries, they turned out great
