STEP 1
Prepare all ingredients. First, we need to choose the right chicken fillet. Chicken meat should be fresh, pink in color and free of gray spots that form as a result of prolonged or improper storage in the store. Next, you need to rinse the fillet under running water, remove the natural film from the surface and dry with a paper towel.
STEP 2
Next step: mix the pepper mixture, basil and salt and pour this mixture onto a dish. Roll (using rubbing) the fillet in this mixture so that the entire surface of the breast is covered with seasonings,

and place it in an enamel bowl, cover with cling film and put it in the refrigerator for a day. During the day, you need to shake the fillet periodically.
STEP 4
After a day, remove the breast and rinse under running cool water to completely remove salt and spices from the surface. The fillet will again need to be dried with a paper towel and rubbed with crushed garlic and paprika.
STEP 5
Wrap the fillets individually in a double layer of gauze and tie them with twine as shown in the video.
STEP 6
Now let's hang the fillet in the refrigerator for 72 hours.
STEP 7
