Try to use flour that does not float, otherwise the dough will not work out - it will float, will not rise properly and products from it will not turn out. You will also need about 50 grams of flour per dust. The yeast must be fresh, otherwise the dough will not rise.

    In a small iron bowl (or saucepan), heat fresh cow's milk to a temperature of 50 degrees. Remove from heat and add sugar and butter. Stir several times until the sugar dissolves and the butter completely melts. We wait 5 minutes until the milk cools to a temperature of 30 degrees. In order to make sure that the milk is not hot and will not kill the yeast, we taste it with our finger, or better yet, with a special thermometer.

    Pour the warm milk mixture and a previously beaten egg with a fork or whisk (ideally homemade) into a bowl with flour. Remove the egg from the refrigerator in advance so that it warms up slightly to room temperature. To do this, you can keep it in warm water for a short time, but not in hot water, so that it does not burst.

    We begin to knead the dough with a spoon. When all the ingredients are mixed and the mass begins to thicken, place the dough on a work surface sprinkled with flour. It will still be a little sticky, that's how it should be.

    Adding flour as you go, knead the dough with your hands in the classic way: folding the edges into the middle and pressing with a little force. Knead the dough for 10 minutes until elastic. One should be soft and pliable, not tight. Cover the dough with cling film and leave to rise for 1 hour in a warm place. The donut dough is ready. Before further use, knead the dough again and prepare delicious donuts.
