STEP 1

We prepare two hundred grams of grape leaves needed for the dolma recipe. Place the leaves in a bowl and pour boiling water over them, then place the leaves in a colander and let the water drain, after which we remove the petioles from each leaf.
STEP 2

Fry two heads of chopped onions in a frying pan until golden, after adding two tablespoons of vegetable oil to it.
STEP 3

Place six hundred grams of minced pork and beef 50/50 in a large bowl and add salt to taste.
STEP 4

Pour half a teaspoon of coriander into a bowl with minced meat.
STEP 5

Add a mixture of peppers to the bowl with minced meat to taste.
STEP 6

Add dill, parsley and basil to the bowl with minced meat to taste.
STEP 7

Mix all ingredients well in a bowl.
STEP 8

Place four tablespoons of cooked rice into a common bowl.
STEP 9

Mix all ingredients thoroughly in a bowl.
STEP 10

Transfer the onion, fried until golden, from the frying pan into a bowl and stir.
STEP 11

Place the grape leaves on the board, smooth side down, and arrange the prepared minced meat in the required proportion.
STEP 12

We fold the leaves into an envelope and wrap it with a roll.
STEP 13

Place the prepared rolls in layers, seam side down, in a convenient pan.
STEP 14

Pour the previously prepared beef broth over the rolls to cover them.
STEP 15

Place an inverted plate on top of the cooked rolls to prevent them from moving during the cooking process.
STEP 16

Close the pan with a lid, put it on the stove and bring to a boil over high heat, then reduce the heat of the stove to medium and cook the dolma for forty minutes.
STEP 17

We put the prepared dolma on plates and serve natural yogurt mixed with chopped garlic as a sauce; you can replace the yogurt with matsoni made from fermented milk or sour cream, which goes well with spices and herbs.
