  1. STEP 1

    STEP 1

How to make dogwood compote for the winter? Prepare all the necessary ingredients. Let's prepare the berries. If you took dogwood with twigs, then pick them and sort them out to look for any spoiled ones that need to be removed.

  2. STEP 2

    STEP 2

Remove twigs and debris, rinse the berries. This is done in several ways - do what is most convenient for you. You can rinse it in running water in a colander. And I poured water into the bowl with the berries and washed them with my hand. I repeated this several times. The first time invisible debris floated up, and the second time I drained clean water.

  3. STEP 3

    STEP 3

Next you need to prepare the jars and lids. Wash the jars in running water and soda. Wash the lids too. Place the wet jars upside down on the oven rack, bring the temperature to 150 degrees and sterilize 1 liter jars for 15 minutes. Boil the lids in water. You can also sterilize jars in the microwave or steam. Choose a method that is convenient for you.

  4. STEP 4

    STEP 4

At the same time, bring the water to boil. If the jars and lids are already ready, then carefully place the prepared berries in them.

  5. STEP 5

    STEP 5

I had three jars - one with a capacity of 1.5 liters, and two with a capacity of 0.9 liters. In the first one I put 200 g of berries, and in the other two - 100 g each.

  6. STEP 6

    STEP 6

As soon as the water boils, pour it over the berries. Cover with lids and let stand until the water cools (it cooled down for me after 20 minutes).

  7. STEP 7

    STEP 7

Drain the water into a saucepan, add half the sugar. Dissolve the sugar while stirring.

  8. STEP 8

    STEP 8

Boil water with sugar again and pour over the berries a second time. Cover with a lid and wait until it cools down again.

  9. STEP 9

    STEP 9

Drain the water, add the second part of the sugar, bring to a boil and fill the jars again.

  10. STEP 10

    STEP 10

Drain the water one last time and, after boiling, pour the berries up to the neck. Roll up the lids of the jars and turn them upside down. You can wrap the jars in a warm blanket, which is what I did - we stood there all night, and in the morning we were pleased with the gorgeous bright color. Store the compote in a cool place.

I prepared dogwood compote for the winter using this recipe. I made it in three liter jars. I picked fresh dogwood straight from the tree, the dogwood tree did well. I put 1/3 of the berries in clean jars and poured boiling water over them. Then I added all the granulated sugar, drained the water, and boiled. The third time I decided not to fill it. After pouring boiling syrup, I rolled up the jars of compote. The syrup came out moderately sweet. Yes, at first the water in the jars was clear. The compote brewed overnight and has already given a beautiful ruby color. It’s very simple! Dogwood compote will definitely delight us in winter with its taste, vitamins, and rich color. Many thanks to the author!
