Step-by-step preparation
STEP 1

Pour boiling water over the dried apricots and let them swell for 15 minutes.
STEP 2

Beat eggs with sugar, not too much.
STEP 3

Add sour cream to this.
STEP 4

Then flour and baking powder.
STEP 5

Chop the dried apricots by squeezing them out of the water.
STEP 6

Add dried apricots to the finished dough and mix.
STEP 7

Grease the mold with butter.
STEP 8

Pour the dough into the prepared baking dish. Bake for about 40 minutes in the oven at 200 degrees. Check readiness with a toothpick or match.
STEP 9

The finished cake is very easy to shake out of the mold. Sprinkle it with powdered sugar.
STEP 10

Lucy, thanks for the recipe! It turned out to be a very tasty cupcake. The only BUT: I added 15% sour cream and the dough turned out to be somewhat dry. Perhaps the sour cream needs to be richer or should I have added a little butter?
