    First you need to prepare all the necessary ingredients for making a cheese cracker, namely: cheese, butter, flour, egg and salt. Particular attention should be paid to the choice of cheese, since the texture and taste of the cracker itself depends on its quality and taste characteristics. I use the most common cheese (Russian, Poshekhonsky, Dutch), but of good quality, since different manufacturers produce cheese of different quality.

    In order to start preparing the crackers, you need to remove the butter from the refrigerator in advance so that it becomes soft. Next, you need to combine with a fork the already softened butter, the yolk (the white is not used in this recipe), salt to taste and finely grated cheese.

    Gradually add flour sifted through a sieve and knead soft dough for cheese cookies. Then put the prepared dough in the refrigerator for 1 hour.

    Next, divide the dough into 2 parts (for convenience), roll it out thinly and cut into segments. Place the cheese cookies on a baking sheet covered with parchment. Use a lemonade straw to make holes in the cookies. Then place the baking sheet with cookies in an oven preheated to 180°C. Bake cheese crackers for 10-15 minutes.
