Cobra tomato salad
Step-by-step preparation
STEP 1
How to make Cobra salad for the winter from tomatoes? In general, it is more like a sauce or even adjika, since all the vegetables are chopped very finely. I always estimate the quantity by eye: there are twice as many tomatoes as bell peppers, and I add garlic and hot pepper to taste. You can add any herbs if you wish, then the Cobra will become more fragrant. Parsley, cilantro, basil, and dill are good for cobra salad. Tomatoes should be selected that are fully ripe and not spoiled.
STEP 2
Prepare all the vegetables needed for the recipe. Wash and dry the peppers and tomatoes. Cut the tomatoes into four parts. Peel the garlic. Remove the core with seeds from the bell pepper and cut into large pieces so that it is convenient to twist in a meat grinder. With hot peppers, on the contrary, we leave the seeds, since they contain all the heat.
STEP 3
Then grind all the prepared vegetables in a meat grinder with the largest grid, alternating different vegetables. This is necessary so that the meat grinder does not clog, especially if you are twisting greens.
STEP 4
Add salt and vinegar to Cobra tomato salad. Mix well. It is necessary to add vinegar so that the salad can be stored longer. With vinegar, Cobra can be stored in the refrigerator for one to three months. To further extend the shelf life, aspirin is added to Cobra salad at the rate of one aspirin tablet per liter of preparation. With aspirin, such a salad will be stored for more than six months. My grandmother kept this Cobra with aspirin in the basement for years!!!
STEP 5
Place the tomato Cobra into prepared dry jars. Since the salad is raw (without cooking), the jars do not need to be sterilized. The main thing is that they are clean and dry. You can wash them with soda, this will slightly extend the shelf life of the workpiece.
STEP 6
At first I wanted to cook Cobra without greens, but then I decided to add half a bunch of parsley and basil at the end. The aroma of the preparation turned out to be breathtaking, and the taste is very piquant!
