STEP 1
How to make a classic sour cream cake? Prepare your ingredients. You can take a large bowl and prepare all the dough at once. Or you can prepare a separate batch of dough for each cake - choose what is best for you. Beat the eggs into a bowl. Add sugar and vanilla. Using a blender, beat the eggs for about 5 minutes until all the sugar crystals dissolve.
STEP 2
Add half a teaspoon of baking soda and sour cream to the bowl with the egg-sugar mixture and mix the mixture well. Then add the sifted flour. Mix well again so that there are no lumps of flour left. Divide the dough into three equal parts.
STEP 3
Preheat the oven to 180 degrees. Grease the mold in which you will bake the cakes with butter and sprinkle the bottom and sides with flour. Pour the first part of the dough into the mold and place in the oven for about 40 minutes. Check the readiness of the dough with a wooden toothpick. If it comes out dry, it means the dough is baked well. Bake the second cake in the same way. Determine the temperature and baking time based on your oven.
STEP 4
Add cocoa powder to the third part of the dough. Mix the dough well.
STEP 5
Just like the previous two, bake the third, chocolate cake. Cool all cakes. If necessary, trim them. You can cut off the tops and put them on the biscuit crumbs.
STEP 6
Start preparing the sour cream. Transfer the sour cream into a deep mixing bowl. Add sugar. Using a blender, beat the sour cream with sugar until the sugar is completely dissolved and the mass slightly increases in volume.
STEP 7
Start assembling the cake. Place the first (white) cake layer on a flat plate. Grease it liberally with sour cream. Place the chocolate cake on top and also brush it with cream. Cover the cake with the third layer and brush the top and sides with cream.
STEP 8
You can decorate the cake with crumbs from scraps of dough or in another way, at your discretion. You can leave the cake white and decorate it with a few raspberries, grated chocolate and a sprig of mint. Sour cream and airy, tender sour cream cakes are very tasty in themselves. Let the cake soak well (leave it in the refrigerator overnight). Serve with tea or coffee. Enjoy your tea!
