STEP 1

How to make classic salsa? Prepare all the necessary products according to the list. You can use white or red onions. Choose tomatoes that are ripe, fleshy, juicy and aromatic. The taste of the sauce will largely depend on the taste of the tomatoes.
STEP 2

Take the tomatoes, wash under running water, dry with paper towels and remove the attachment point to the stem. Peel the onion. Cut the vegetables into large slices. Place them on a baking sheet and drizzle with a little sunflower oil with a high smoke point. Preheat the oven to 180 degrees in advance and bake the vegetables for about 30 minutes. You can add garlic cloves if you want a spicier flavor from the salsa and jalapeños.
STEP 3

Remove the roasted vegetables from the oven, cool slightly and transfer to a blender bowl. If you don't have a blender, grind the vegetables through a meat grinder.
STEP 4

Add salt, lemon juice, and cumin seeds to the blender bowl. Wash the greens and hot peppers and dry. Coarsely chop the greens, remove the stem and seeds from the pepper, add everything to a blender. Add pepper to taste. Please note that the spiciness of the sauce will develop over time, so use a sense of proportion. Pulse until smooth, pulsing and pausing every 10 seconds. This is necessary in order to evaluate the consistency of the sauce.
STEP 5

That's all! Classic salsa is ready! Taste it. If you want, add grated fresh garlic (2-3 cloves), salt to taste, you can add a little sugar if the tomatoes are sour. Pour in lime or lemon juice (about 1 tbsp). It will soften the spiciness of the sauce. In general, bring the dish to your usual taste.
STEP 6

Serve the resulting sauce with meat, fish dishes, baked poultry and game, or simply with bread, pasta, potatoes, tortillas or chips. The sauce can be served immediately or stored in the refrigerator in an airtight container for up to 3 days. Bon appetit!
