    Pour water into a saucepan of suitable volume, place on the stove and bring to a boil. You can immediately use boiling water from the kettle, this will speed up the cooking process. Covering the pan with a lid will help the water boil faster. Add salt. Dip the spaghetti into the water so that it does not break. After getting wet, their lower part will become soft, which will allow you to immerse the pasta in water in a spiral. Cook the pasta in boiling water for 6-8 minutes

    How much and how to cook pasta correctly? In its classic form, the pasta should be al dente, half-cooked, slightly firm inside. Its cooking time depends very much on the composition and manufacturer. Usually the package indicates the approximate cooking time - use it as a guide. Drain the water through a colander, sprinkle the pasta with olive oil and stir. You can cover the pan with a lid if the sauce is not ready by this time.

    Prepare the ingredients for the sauce. What cream is better to use? I use 20% fat cream, this will make the sauce more delicate and creamy. Herbs - Italian mixture ideally. If you don't have any on hand, you can use your favorite seasoning mixture. Or limit yourself to dried rosemary and basil.

    How to cut bacon? Cut the bacon slices into square pieces. Heat the oil in a frying pan and fry the bacon until golden brown over medium heat, stirring everything with a spatula. If desired, olive oil can be replaced with any other. Make sure that no moisture gets into the pan, otherwise the oil will sizzle. If the bacon fat begins to crackle and splatter, reduce the heat.     Pour cream into the pan and stir. If you lowered the heat before, return it to medium. Simmer everything, stirring, for one minute.

    Add the pasta to the pan and stir gently. Keep the dish on the fire for about one minute so that everything warms up well. Remove the pan from the stove.

    Add the raw yolk to the carbonara pasta and stir quickly so that the yolk spreads throughout the dish. Here you may have doubts about using raw yolk. If you are not sure of its quality and want to remain calm, you can skip this step. Divide carbonara pasta among plates and sprinkle with grated Parmesan cheese to taste. Garnish the dish with a fresh basil leaf and cherry tomato slices.

I recently watched the movie Eat, Pray, Love. And there the main character devoured different types of spaghetti, well, her mouth was just watering. Thoughts on spaghetti - Carbonara, of course. I saw enough delicious reviews and also wanted to make pasta with bacon and cream. I deliberately left out the word “carbonara” from the name, since I didn’t add an egg. I did everything else according to the recipe with minor deviations. I took 15% cream. I used regular hard cheese, since there was no parmesan. The cooking process is really not complicated and fast. Despite some deviations from the recipe, the pasta turned out very tasty, tender, with a pronounced creamy taste. Maria, thank you so much for such a delicious recipe. I will definitely cook it again, maybe next time I’ll risk cooking it with yolk, and it will be “carbonara”. Here is my photo report)))

Thanks to the author for the amazing recipe, I prepared it exactly and it turned out to be a wonderful pasta with a delicate, bright and creamy taste! 10 out of 10. I’ve already made it twenty times, it’s so delicious) If anyone is interested, instead of a mixture of herbs I just used dried oregano, here’s how you like it)
