Chuck chuck in Tatar

A favorite dessert with the taste of honey - incredibly tasty! Tatar chuk-chak is made from a simple unsweetened dough, but it turns out quite sweet due to caramel made from honey and sugar. The dessert turns out incredibly tasty and melts in your mouth!

  1. STEP 1

    STEP 1

How to make chuk-chak with honey in Tatar style at home? Prepare the necessary ingredients. Sift the flour so that it is saturated with oxygen. This will make the dough more tender. Beat the eggs into a deep bowl, add a pinch of salt and beat with a fork or whisk until smooth.

  2. STEP 2

    STEP 2

Gradually adding flour, knead the dough. Transfer the dough from the bowl to a floured work surface and continue kneading it with your hands. The dough should be quite tight and not sticky to your hands. You may need a little more or a little less flour. Read more about flour and its properties in a separate article, link at the end of the recipe. Form the dough into a ball, cover with cling film to prevent it from drying out and let it rest for 20 minutes.

  3. STEP 3

    STEP 3

Divide the rested dough into 2 equal parts. Roll one of them with a rolling pin into a thin round cake, approximately 2 mm thick. The dough is not very pliable, it will always strive to shrink back, so when rolling it out you will have to make some effort. Roll from the middle to the edges. Make sure that the dough does not stick to the work surface - if necessary, turn it over to the other side and dust it with flour.

  4. STEP 4

    STEP 4

Cut the resulting cake into strips approximately 5 cm wide. It was more convenient for me to make cuts at a slight angle - obliquely.

  5. STEP 5

    STEP 5

Now you need to cut each strip crosswise into strips. You can cut the sticks thinner or thicker - I cut strips 1 cm wide. Do the same with the second half of the dough.

  6. STEP 6

    STEP 6

Heat vegetable oil in a frying pan over high heat. For information on how to choose the right oil, read the article at the link at the end of the recipe. You can check whether the oil is hot enough using a wooden spatula by lowering it into the oil. If the oil around it hisses and foams, it means it has warmed up enough. Reduce the heat to moderate and place a portion of the ingredients in the frying pan. Fry on both sides for about 3 minutes until lightly golden.

  7. STEP 7

    STEP 7

Use a slotted spoon to place the fried dough onto a wide dish lined with a paper napkin to drain off excess fat.

  8. STEP 8

    STEP 8

Prepare the syrup. To do this, mix sugar and honey in an iron bowl or saucepan. Bring the mixture to a boil over medium heat, stirring constantly with a spoon, boil for a couple of minutes and remove from heat.

  9. STEP 9

    STEP 9

Place the sticks in a deep bowl and pour hot syrup over them. Mix everything well. Transfer the chak-chak to a plate and refrigerate until the caramel hardens. Homemade cha-chak is ready. Bon appetit!

I love Tatar chuk-chak, but I didn’t think it was so easy and quick to prepare. The dough is made with just two main ingredients, eggs and flour! Kneading the dough is also easy, it turns out soft and elastic. I fried it in a large amount of oil, portion after portion, you must not be distracted, in a split second the sticks acquire a golden color. Immediately from the fire, you need to pour the syrup over the sticks and place them where and how they should, because the syrup hardens quickly. Crispy, sweet, melt-in-your-mouth chak-chak is the best treat for tea!

For the first time in my life I’m preparing Chak Chak, although I’m half Bashkir) If I describe the taste of sweetness, brushwood is the closest, of course, but Chak Chak is not grainy, it is much more tender and melts in the mouth. Thanks for the recipe, I messed everything up and insisted on rolled out flatbreads, but I think it didn’t spoil the dish much😅😂

The recipe does not specify what size eggs. I beat in the best ones and had to add more dough so that it wouldn’t stick to my hands.
