I really love homemade sweets, but I make them from baby formula, I like this specific taste. My daughter also loves such sweets, so I experiment from time to time) I looked at this recipe for chocolate truffles for a long time, read the note about the instability of the shape and thought about how to fix it. I had an experience where the candies also melted. Here are the changes I made. To begin with, I took 80 ml. water instead of 100 ml. Cooked the syrup until noticeably thickened, but so that the color did not change much, then added butter and stirred, removed from heat. The result was a rather thick mixture. I decided to add the same amount of shortbread cookies instead of nuts. I figured that the cookies should absorb excess moisture. I smashed the cookies with a rolling pin, but not until they were completely crushed, the blender just broke) I mixed the crumbs with cocoa and added them to the syrup. Mixed it up. Then gradually added the milk mixture. First I kneaded it with a silicone spatula, and finally I kneaded it with my hands like dough. It took me just 200 g of the mixture. After kneading, the “dough” almost cooled down, became warm and came together. I pinched off pieces, formed pyramids and rolled them in natural cocoa. The candies hold their shape perfectly and become even harder after cooling. They stretch a little when biting, but the shape is very stable. The cocoa and milk mixture smells good, which is what I like about these candies. In general, the experiment was a success) The cutlets are excellent, very tasty! I think you can add some nuts too.
