    How to cook chicken over a fire? As easy as pie! Prepare all the necessary products that are indicated in the recipe. If you have chicken from the freezer, then defrost it first at room temperature. Remove any remaining feathers, if any, cut off the sebaceous gland and rinse the carcass under running cold water. Dry the chicken with a kitchen towel to remove any remaining water.

    Pour soy sauce into a deep small bowl and squeeze out the juice of half a large lemon. Add mustard and ground black pepper.

    If you are using garlic, now is the time to add it to all the ingredients in the bowl. First peel the cloves and pass them through a press. Add salt if necessary. I usually don’t use salt since soy sauce itself is salty.

    Mix everything thoroughly until smooth.

    Cut the chicken along the breast as in the photo. Place the carcass on a wide plate or tray. Pour the marinade over and rub evenly over the entire surface of the bird on both sides. Place the chicken in a plastic bag and marinate in the refrigerator for at least 2 hours. I usually leave it on all night.

    Light up the grill. When the coals are covered with a white coating, proceed to the main cooking process. Lubricate the grill with vegetable oil using a sponge or silicone brush. Remove any remaining garlic and mustard from the chicken, otherwise they will burn during the frying process. Place the bird over the coals.

    How to check if chicken is ready? Make a deep cut on the bird's thigh. If you see clear juice, the chicken is ready!
