    Wash the chicken fillet well, dry with a paper towel, and remove any films.

    Mix salt, pepper, bay leaf, dry garlic powder and grated garlic. Add cognac (this time I added “Mariinsky Balsam” with herbs - it turned out very fragrant).

    Rub the fillet mixture well. Cover and place on the bottom shelf of the refrigerator. Let stand, turning over, for 2 days.

    Rinse the fillet well and soak in water for 3-4 hours, change the water.

    Drain the fillet and wrap it in cheesecloth.

simple, cheap and cheerful! only I didn’t soak it, but just rinsed it with water, wrapped it in gauze and hung it in a draft, and the second time I only had normal garlic and bison with a blade of grass, so I stood it, and then hung it in the kitchen without rinsing - I never tried it - my relatives ate it !
