    How to prepare sugared cherries for the winter? Prepare the necessary ingredients. For harvesting, use only ripe berries. The fruits must be large, ripe and always fresh. I made a preparation from seedless berries. But using this technology you can also prepare fruits with seeds.

    Rinse the cherries under running water. After washing, place the berries on a table covered with a kitchen towel or paper towel. Leave the cherries until the water is absorbed and evaporates.

    Remove the pits from the cherries. When removing the pit, it is necessary to damage the fruit as little as possible and try to preserve the juice. To do this, you can use a special separator device or improvised means: a cocktail straw, a pin or, like me, a hairpin.

    In all recipes without cooking, cherries and sugar are taken in the same quantities. Therefore, weigh the berries and measure out an equal amount of sugar. Place the cherries and sugar in a small saucepan so that it fits in the refrigerator. This condition is mandatory. Pour sugar over the cherries and mix thoroughly.

    Leave the pan for about 10 hours at room temperature. Stir the cherries every 3-4 hours. Place the pan in the refrigerator overnight, covering it with a lid, so that the mass does not absorb foreign odors. In the morning, remove the pan from the refrigerator and again keep the mixture at room temperature, stirring systematically. And so on for 4 days.

    Sugar usually dissolves within a day, but it is still necessary to soak the cherries in sugar, stirring systematically, for exactly 4 days so that the fruits are well saturated with syrup. On the fourth day, prepare the jars. Wash them with baking soda. The alkaline composition of soda neutralizes the acidic environment that causes fermentation, so the shelf life of the product will increase. The jars do not need to be sterilized, since cherries cannot be sterilized either. The main thing is that they are dry.

    Transfer the berries to jars, fill them to the top with syrup so that there is no air cushion left, and close the jars with lids. Cherries in sugar are ready for the winter. The shelf life of the product without cooking, processed with pits, is no more than 12 months. This blank is used first. Store the opened jar in the refrigerator. Bon appetit!

I was very interested in this method of preparing cherries in sugar for the winter. Although it was not usual and it was not clear what would happen in the end) As indicated in the recipe, I took the container out of the refrigerator in the morning and stirred it all day. At night we covered it with a lid and put it away to cool again. My sugar completely dissolved only on the third day. Every day the cherry “jam” became darker and more transparent. The photo shows the first, third and fourth days) The preparation turned out to be very intense! The cherries were perfectly soaked in sugar syrup. It tastes like a cross between fresh cherries and jam. The main thing is that it is very tasty!

I love cherries very much, and in winter they are either frozen or in compotes or jam. And this recipe is a real find for lovers of this berry. Every summer we also roll up jars of cherries according to this recipe, and they are stored in the basement perfectly, almost until spring. And what’s most interesting: the taste remains like fresh.
