It turns out interesting. You should definitely try it. Will a few minutes be enough for salted eggplants? I usually add salt and crush it under a press for about 20 minutes, for example - I put it on one cutting board, covered it with another and pressed it with a jar - so that the liquid is released, then they won’t be bitter.
