STEP 1
How to bake a cake with jam? Prepare all the necessary ingredients. Be sure to sift the flour. This is the first secret of successful baking; the dough will be softer and more tender. Remove margarine and eggs from the refrigerator in advance so that the margarine softens and the eggs are warm. Unlike preparing regular dough, we start with flour. Add vanillin to the sifted flour at the tip of a knife; a larger amount can add bitterness to the finished baked goods.
STEP 2
Add sugar to the flour in a bowl and mix with a spoon. You may need less or more flour depending on its properties.
STEP 3
Take the eggs and wash them under running water and soda, as there may be harmful bacteria on their surface. Beat the eggs into the flour. If you have large eggs, then one will be enough.
STEP 4
Cut soft margarine into pieces. If you don’t have time to wait for the margarine to soften at room temperature, you can grate it cold. This will not make the dough any worse. Add half a teaspoon of baking soda slaked with vinegar. Replace margarine with butter if desired.
STEP 5
Knead the dough. The second secret to successful shortcrust pastry is that you cannot knead it for a long time, otherwise it will be tough and not tasty. Wrap the dough in cling film and put it in the refrigerator for half an hour. Meanwhile, take out your favorite jam. I have plum. It is better to take one that is homogeneous in consistency and thicker.
STEP 6
Divide the finished dough into four parts. Roll each of them into a layer about 0.5 cm thick; no thicker is needed, the dough rises well during baking. You can make the cake any shape you want, round or square.
STEP 7
Preheat the oven to 200 degrees. Bake each cake, placing it on a baking sheet lined with baking paper, for about 10 minutes, until golden brown. The times are approximate, be guided by the operating characteristics of your oven.
STEP 8
Take out the finished cakes, let them cool slightly, cut off the uneven edges. Grind the pieces of dough into crumbs, this can be done simply with your hands, the dough is very soft. You can also use a rolling pin or blender for this. Set the crumbs aside; you will need them a little later when icing the cake.
STEP 9
How to form a cake? Grease each cake with jam on top and cover with the next cake. Grease the top cake and sides with jam as well. If the jam is very thick, then it is better to form the cake while the cakes are warm, then it will melt a little and soak the dough well.
STEP 10
Sprinkle the formed cake with crumbs and place in the refrigerator to soak. Ideally, leave the cake in the refrigerator overnight. Then it will be much tastier and juicier.
STEP 11
Serve the cake with hot aromatic tea, cocoa or coffee. Enjoy your tea!
