For dessert I decided to make berry mousse. The recipe is simple, straightforward and easy to prepare. I took frozen black and red currants for him. I didn’t drain the juice, I immediately filled it with water and brought it to a boil. Then I mashed the berries with a puree masher, it’s more convenient for me. I left it to brew for a while and strained through a fine strainer. At the same time, I squeezed out the berry juice well. I added half as much sugar, it depends on your own taste and the degree of acidity of the berries. The semolina was introduced in a thin stream so that lumps did not form. During cooking, I stirred frequently for 15 minutes. The mass turned out like jelly of medium thickness. I didn’t beat it for long, I was quite pleased with the appearance. After cooling in the refrigerator, the dessert became thicker, similar to a soufflé. The grains of semolina are felt, but so harmoniously that it does not interfere at all. Pleasant delicate consistency and mild taste!

It's easy to prepare and delicious. I prepared a large saucepan with currants and apples, so that half of it was for compote with berries, and the rest for mousse. Prepare it in the evening, in the morning, and a wonderful breakfast for the kids is already ready. Only I took 1 tbsp for 1 glass of liquid. spoon of semolina, it turned out to be an airy dessert. And it’s better to use semolina brand M, not T, so you won’t notice any grains of semolina in the taste. P.S. I also tried to make cranberry, but it is significantly bitter.

The dish is very tender and airy. I took black currants, raspberries and strawberries. 1 tablespoon of granulated sugar turned out to be too much. But if you make it from cranberries, then it’s probably the best :) The dessert turned out sweet. The specified quantity of products yields 4-5 servings. Very, very filling.
