Step-by-step preparation
STEP 1
Let's prepare the ingredients. Beef meat must be fresh; it is better to take young beef. You can bake beef with prunes, leaving the meat in a whole piece, wrapping it in a roll and stuffing it with prunes. But it will take quite a lot of time to prepare this dish, which is always not enough on the eve of New Year's Eve.
STEP 2
Therefore, it is faster and easier to cut the meat into portioned pieces and simmer it on the stove. We wash the meat and cut it into cubes, rinse it again, and let the water drain well from the meat.
STEP 3
Wash the prunes thoroughly and steam with hot water so that they swell. 15 minutes is enough. Then drain the water and cut each prune into several pieces with a knife.
STEP 4
Wash the walnuts and dry them in the microwave or on the stove in a dry frying pan. Walnuts need to be crushed into small pieces. You can do this using a regular rolling pin, putting the nuts in a bag, or with a blender. Just don't grind the nuts into flour.
STEP 5
Peel the onions and cut them into halves of rings. Pour vegetable oil into a frying pan and fry the onion in it until golden brown. Remove the onion with the remaining oil from the pan.
STEP 6
Place the meat in a dry frying pan with a thick bottom. There is no need to add vegetable oil right away to make the beef juicy and tender; it must first be stewed in its own juices.
STEP 7
Cover the pan with a lid and fry the meat for about 10 minutes. Then remove the lid, stir the beef, and let the moisture from the pan evaporate completely.
STEP 8
Add vegetable oil. Fry the meat over medium heat in oil for 15 minutes, let it brown.
STEP 9
Add prunes to the frying pan with the meat and add a little water. Add salt and ground black pepper. Simmer them together over low heat for about 40 minutes. Then add the poached onions and walnuts to the frying pan (a handful of nuts should be left for serving). Simmer for about 10 more minutes. The liquid should almost completely evaporate. Serve the beef with prunes, sprinkled with chopped walnuts, and cranberry sauce. Bon appetit
